Another favorite summer salad, this one inspired by a meal shared with my dear friend, apparel designer Jamie Mihlrad Banks, at Cafeteria in New York. This is super easy, super healthy, and amazingly delish!
WATERMELON, SHRIMP & FETA SALAD
watermelon, diced and cubed
shrimp, peeled & deveined
salt & pepper
1. Sautee shrimp with olive oil, salt & pepper. Squeeze fresh lemon over top when shrimp are pink & done
2. Assemble salad – arugula topped with watermelon, feta cheese and shrimp
3. Add dressing if desired. I use Brianna’s Real French Vinaigrette
Serve with fresh bread and enjoy!
