Tasty Thursday – Chili Rubbed Salmon

Tasty Thursday is my favorite day to blog, it’s all about new recipes I am constantly trying, and it means the weekend is almost here!

Today’s recipe however is courtesy of the fiance. Whenever Matt cooks he does something spicy, a la Bobby Flay, and it turns out phenomenally good! On Saturday (our 4 year dating anniversary!) he chose a recipe from Bobby’s “Boy Meets Grill” cookbook which resulted in a gorgeous grilled filet of Black Pearl salmon from Scottland. He topped the salmon with a chili rub which added heat and crunchiness and then made a cold corn salsa on the side.

Rub
Mix ingredients below and rub on top of salmon – easy! 

1/2 c. dried adobe chilies
2 tsp. cumin
1 1/2 tbs. dark brown sugar
1 tsp. Vietnamese cinnamon
1 tsp. garlic powder
salt & pepper
1/2 c. olive oil

Salsa

Ingredients
1 can of corn kernels
3 chopped green onions
1/2 bunch chopped cilantro
1/4 c. lime juice
1 jalapeño, seeds in!
1/2 c. olive oil
salt & pepper

Directions

1. Toast finely chopped jalapeño in a small sauce pan
2. Blend toasted jalapeño with lime juice, then add olive oil to make a puree
3. Toast corn in a small sauce pan
4. Toss corn, chopped cilantro and chopped green onions with the lime jalapeño sauce and salt & pepper
5. Serve over salmon
